Buttered leeks are a dream as a bed for fish or a chicken fillet and one bulky leek will serve two people, unless you want more! 😉
Salt & Pepper
Melt a good knob of butter in a pan on a medium heat.
Add chopped leeks and some thyme (I use dried if I don't have fresh and it works)
Stir gently, reduce heat and cover for fifteen minutes on a low heat, stirring occasionally to make sure the leeks aren't sticking.
Add salt and pepper to taste.
Top with a roast chicken breast or a baked cod loin and yum!
