I don't like food waste so often use leftovers for another meal. Recently I created (I'll use the term loosely) my dinner from some leftover spicy tomato chicken and some lingering items from the firdge! This was a case of being on my own for dinner so the risk was all mine, but it turned out to be yummy and pretty healthy, so here goes:
Ingredients (I did this for one and it was a big yummy bowl)
*Leftover spicy tomato chicken (used on pasta the night before, diced chicken, canned tomatoes, garlic, diced onion, diced pepper, chilli, paprika, oregano and a dash tobasco)
*1 small sweet potato
*1 small corgette
*1 small leek
*3 mushrooms quartered
*A chunk of cheddar, grated
*A knob of butter
*1 level teaspoon of dried thyme
*salt & pepper
*Whilst leftover chicken is gently heating in a saucepan prepare the vegetables
*Peel sweet potato, peel corgette, trim and rinse leek
*Using the veg peeler, shave ribbons of sweet potato
*Shave ribbons of corgette (Dice the watery centre, pat with kitchen towel and add to chicken, no waste here!)
*Cut leeks into 2inch pieces, cut lengthways and length ways again to create small ribbons.
*Melt a knob of butter in a pan and saute mushrooms with salt, pepper and thyme for 1 minute
*Add sweet potatoes and saute for two minutes
*Add leek and saute for 1 minute
*Add corgette and saute for 1 minute
*Season to taste and serve in a bowl
*Put the heated leftover spicy tomato chicken on the top and sprinkle with the cheese
A great way to clear the fridge, use leftovers and have some comforting cheese! A healthy and tasty leftovers dinner!
