The other day I wanted some veggie goodness but also wanted to cosy up with a bit of comfort food. So on a mission not to venture the 50 metres to the shop (it was raining!) I spent a few minutes staring into the fridge hoping a meal would just appear on a plate! It didn't.
Anyway I did figure out what I could eat and I'll warn you, on paper this doesn't sound so great but it was really yummy! And I don't think it's too unhealthy! I just used what veg I had in but I'm sure you can play around with the contents of your fridge.. I winged it (My culinary speciality) with most of the quantities as I figured I could have any leftovers for next days lunch!
